Nudo Ibiza

Nudo is a small, independent restaurant on the shore at Es Figueral, on the north-east coast well away from the island's club belt. It was set up by a group of chefs and the kitchen is deliberately tiny, which shapes everything: the menu is short, it changes with what is available, and the opening hours flex with how many bookings are on the sheet. The cooking is Mediterranean at its base but pulls in influences the founders brought with them from Italy, Guatemala and the Nordics, with occasional Mexican and Japanese notes, and it runs to soulful pasta, just-landed seafood and vegetable-led plates finished over smoke. Natural wines from small Balearic producers make up much of the list, in keeping with the minimal-intervention approach in the kitchen. Es Figueral itself is a broad sandy beach in a bay backed by low cliffs and pine, quiet and family-heavy, with none of the density of the south coast. The restaurant is closed on Mondays and shuts entirely for winter, reopening in spring. Being on the north-east coast, it faces the sunrise rather than the sunset, and the bay is at its best in the morning light.
